We leave them to rest until they are completely cool and then carefully clean them and set them aside. While the prawns are resting, we give the red onion a special touch. We finely julienne it and marinate it in lime juice. The acid from the lime transforms the onion, softening its flavour and giving it a citrusy freshness. We move on to the mango and avocado, two fruits that, as well as giving a tropical touch to this dish, add creaminess and sweetness.
